At Vitalia Rockside, we prioritize from-scratch cooking and source fresh ingredients weekly. Our culinary team prepares meals that are flavorful, nutritious, and tailored to resident needs. From house-made soups and sauces to freshly prepared entrées and sides, we focus on visible, high-quality preparation. As Culinary Director, I see how fresh sourcing and scratch cooking improve health, satisfaction, and daily life.

Cooking to Order with Real Ingredients

In my kitchen, from-scratch cooking means preparing fresh meats and seafood to order. I create our sauces, dressings, side dishes, and salads in-house. We do not rely on store-bought, prepackaged products. Instead, we build flavor from the ground up.

Fresh ingredients support resident health by emphasizing whole, minimally processed foods. Because we control every ingredient, we know exactly what goes into each meal. That transparency matters. It encourages healthy eating habits and supports a higher quality of life.

Adapting Meals with Intention

I adapt meals by cooking to order and selecting non-processed meats, seafood, fruits, and vegetables. Whole foods naturally provide more vitamins and nutrients. As a result, residents maintain healthier and more active lives.

We balance comfort foods with fresh, health-conscious options by building flavor through herbs and spices. Rather than relying heavily on salt or butter, we layer seasoning thoughtfully. This method protects both taste and wellness.

One standout favorite is chicken paprikash. We prepare it entirely from scratch with onions, garlic, paprika, butter, olive oil, boneless chicken thighs, chicken bone broth, tomato paste, heavy cream, Greek yogurt, and cornstarch.

First, we sweat the onions and garlic. Then, we lightly toast the paprika to deepen its flavor. Next, we simmer the chicken in broth and tomato paste until tender. After that, we add heavy cream and reduce the sauce. If needed, we thicken it with cornstarch. Finally, we finish the dish with Greek yogurt and seasoning. Using Greek yogurt adds protein and lowers fat compared to traditional sour cream versions.
